I absolutely adore tomato soup and it’s great to find that a few supermarkets now sell a vegan version for days when you don’t have the time or inclination to knock up a bowl from scratch. For days when you are feeling the need to eat homemade, this recipe can be knocked up nice and quickly, we managed it in just 5 minutes with the Vitamix, allow 20 minutes to make in a pan and then blending.
- 2 tins chopped tomatoes
- 150ml natural yoghurt
- Handful fresh basil
- 2 cloves of crushed garlic
- Pinch of salt and pepper
Pop the tomatoes, basil, garlic and salt and pepper, in the blender and slowly turn up to max. Blend for 3-4 minutes or until steam appears from the top.
Add the yoghurt and whizz briefly until combined. Season to taste and serve!
