Spiced Up Vegetable Soup

We’re big soup fans in this house, in fact its one of the reasons I invested in the Vitamix as we make so many. This one crams in a whole lot of goodness in a bowl. We make ours in the blender, but you can make it in a pan and then whack it in the food processor afterwards.

Ingredients

  • 2 small carrots
  • 1 parsnip chopped
  • 2 jalapenos
  • 1 yellow pepper
  • 1/2 red onion
  • 2 garlic cloves
  • 120ml soya cream
  • 300ml water
  • 1 stock cube
  • 5 basil leaves
  • 1 tablespoon olive oil

Methods

Vitamix Method

Heat the oil in a pan and lightly brown the onion. Add the garlic and cook for 1 minute. If you are using a Vitamix, add everything to the blender and gradually turn up to high. Leave to whizz for around 5 minutes, or when it begins to steam.

Traditional Method

If you are making in the pan, these are the steps for you. Heat the oil in the pan and lightly brown the onion. Add the garlic and cook for 1 minute. Add the pepper, carrots and parsnip and stir thoroughly. Add the water and the stock cube, and the basil leaves. Bring to the boil and then reduce to a simmer until the vegetables are cooked through, which will be around 20 minutes. Stir through the soya cream and remove from the heat. Add to your blender and whizz until smooth.

Serve with big chunk of crusty bread. Lush.
