One of my first thoughts when I went vegan was “what about dessert”! What am I going to eat now? In my first week I lost a few pounds whilst I pondered this. Then I discovered cake, biscuits, desserts galore! This is one of my trademark puddings. If you invite me round, chances are I’ll be bringing this.
- 2 packs or original Oreos
- 2 bars of dark chocolate
- 1 pack of silken tofu
- 8 tablespoons melted vegan margarine (we use Pure)
- 1 tablespoon of maple syrup
- 1/2 vanilla pod
You’ll need a flan dish or something similar to put it in.
Crush the Oreos until completely broken. I whizz mine up in the food processor, but a plastic bag and a whack with a rolling pin works equally well. Add the melted margarine until combined. Pour into your dish and press down well. Pop in the fridge to chill.
Whilst the base is chilling, it’s time to make the filling.
Melt your chocolate in a Bain Marie or double boiler. Once melted, remove from the heat and add the tofu, maple syrup and the seeds from your vanilla pod. Blend together until smooth in either a food processor or with a stick blender. Once mixed pour onto your biscuit base.
Pop in the fridge to chill. If you’re feeling jazzy you can pop a raspberry and some mint leaves on the top. I’ll leave that up to you.
