Roasted Plum Tomato and Red Pepper Soup

Another day, another soup….we’ve just found a new place to get our fruit and veg fix, that has very little plastic, so we are celebrating by cooking up a soup storm!


  • 6 plum tomatoes
  • 2 red peppers
  • Glug of oil
  • Sprinkle of oregano
  • Pinch of salt


  1. Pop the tomatoes in an oven proof dish with a glug of oil and the oregano and salt.
  2. In a separate dish add the peppers and a glug of oil
  3. Roast for around 25 minutes.
  4. Remove from the oven and pop in the blender, whizz until smooth.
  5. Eat.
